Shrimp Ceviche

This recipe is from the Jicama Grill, I think this is the best Shrimp Ceviche recipe in the world...it is like a colorful fiesta in a bowl.

SERVES 12 (change servings and units)

Ingredients

    Blanche shrimp in boiling water for about 5 minutes, then shock in ice cold water. Strain when cooled.

    Cut shrimp into 1-inch pieces and add to bowl.
  3. 3
    Add citrus juice and marinate for 2 hours.
  4. 4
    Add red onion, tomatoes, chilies and cilantro, marinate for 2 more hours.
  5. 5
    Add avocados and cucumber before serving.

I made this with shrimp and it was delicious, easy!, I can buy bottled naranja agria (sour orange) here so that's really convenient. I don't add avocado or cukes and do tomatoes for color only. But the lime, lemon, and sour orange together with lots of cilantro, it's to die for! I put just a smidge of bottled mojo for kicks, I just finished making it with red snapper instead of shrimp and we'll see how it turns out, smells good so far! Thanks!!

    I first tasted ceviche when I met my ex-husband who was a chef. It so happened that my favorite dishes on the buffet were his creations, including a delicious scallop and shrimp ceviche. This is wonderful dish especially served on those hot, sultry summer evenings. Enjoy it with a some chilled wine and fruit. Yummy!
