Grilled Sweet Potato Packets With Pecan Butter

Easy, no-mess sweet potatoes that kids and adults both love.

SERVES 4 (change servings and units)

    Prepare barbecue grill for direct cooking.
  2. 2
    Alternately place potato slices and onion rings on four 14×12-inch sheets of heavy-duty foil. Brush tops and sides with oil to prevent drying.

    Double fold sides and ends of foil to seal packets. Place foil packets on grid. Grill packets, on covered grill, over medium coals 25 to 30 minutes or until potatoes are fork-tender.

    Meanwhile, to prepare Pecan Butter, combine butter, sugar, salt and cinnamon in small bowl; mix well. Stir in pecans. Carefully open packets; top each with dollop of Pecan Butter.

These worked great for our camping trip. I made up the pecan butter and put in a container in the cooler and sliced the potatoes and onion and put them in a foodsaver bag. I ended up microwaving the sweet potato mixture a little to help it along cooking.

    Very, very good. Dh made a bit of a pig of himself with this. He REALLY liked it and he's not particularly fond of sweet potatoes. I had the oven going so I put my packets in there rather than start the grill up.
