This is the only way I make my turkey gravy, there might be better recipes out there but I have been using this one for many years, my family loves this gravy and I have served it to dinner guests with no complaints, it is so easy and really a no-fail recipe --- if you do not have enough pan drippings to make 4 cups, then just add in chicken broth or water to make 4 cups, or just use 4 cups chicken broth with 2-3 teaspoons chicken boullon powder --- You can keep this warm on top of the stove until ready to serve, just whisk occasionally. If you have any left over, you can freeze it, this gravy freezes very well so don't wait until holidays to have this cook up tons of this gravy using chicken broth and then freeze in plastic containers to serve on your hot turkey sandwiches and fries all year long, this gravy is delicious --- this gravy and of coarse any gravy is at it's best when used right away! --- also see my Kittencal's Easy Fat-Free Gravy

Ingredients

  • 1/2 cup butter (you can use margarine)
  • 1/2 cup flour
  • 3 tablespoons flour
  • 1/2 teaspoon black pepper (more is better, I use freshly ground pepper)
  • 4 cups pan drippings (or use chicken broth, or add in chicken broth or water to drippings to make 4 cups)

Directions

  1. 1
    Drain the pan drippings for the roasted turkey through a fine strainer.
  2. 2
    Let sit and then remove any fat from the top of the drippings.
  3. 3
    Add in chicken broth or water to make 4 cups if neccesary.

    In a medium saucepan, melt margarine or butter.
  5. 5
    Add in lots of black pepper.
  6. 6
    Add in 1/2 cup flour plus 3 tablespoons; constantly whisk for about 3 minutes over low heat.

    Slowly add in the 4 cups turkey broth/drippings; whisk constantly over medium-low heat until thickened (about 3-4 minutes).

    Simmer over low heat another 3-4 minutes adding in salt if needed.

    To make this gravy using only CHICKEN BROTH; prepare as directed only use 4 cups chicken broth and 1 tablespoon chicken boullion powder (I use OXO) in place of the turkey pan drippings.

    Make lots this freezes well; to defrost just pop in the microwave for about 3 minutes or more, stir then serve -- or leave in the refrigerator overnight to thaw and heat in the microwave.

This looked really good, but I didn't try until the next day when I heated everything up. The sauce was way too thick and tasted bad. My hubby refused to try it. I don't know if I would try again, but if I did I would make it less thick and eat the day of.

    EASY!! I thought that I couldnt' make homeade gravy-this recipe proved me wrong! I used about 1 cup pan drippings ( skimmed of fat) to 3 cups chicken broth. thanks for this great, tasty recipe

    Loved this gray. Very tasty. Was a tad to thick, but, adding the water helped to thin it out. Really good flavor. Did add some sage and thyme cause I like these spices in my gravy.
