Spinach Strawberry Salad

Spinach and strawberries what an odd combination for a recipe. That is what I thought before trying this the first time. Now I get many requests to bring this for dinner parties. The raspberry wine vinegar adds a marvelous taste, and compliments the first two ingredients. This salad is very eye pleasing in crystal.

Ingredients

  • lb spinach (I pinch off the larger stems)
  • pint strawberry, sliced set a few aside (egg slicer works wonders)
  • 1/2 cup pecan, toasted
  • DRESSING

    Directions

      Toast pecans over low heat, set aside to cool.
    2. 2
      Combine dressing ingredients and shake well.
    3. 3
      Toss and garnish with a few sliced strawberries.
    4. 4
      Serve immediately.

      (Thanks to Chef #320254's review I'm updating this) If you'd like, use a high speed mini-mixer to emulsify the dressing.

    Tweaked this for speed using what was in the fridge, added blue cheese crumbles and used Brianna's Blush Wine Vinegarette. Was a total hit and hubby asks for it at least once a week.

    I am looking for new ways to eat spinach. this was very interesting and different. i love feta cheese and never thought to mix it with strawberries and raspberry dressing. Wonderful combination...and beautiful. Thank you

    I've made this salad several times now, sometimes mixing dark green lettuces and spinach. I also LOVE to add feta cheese. The combination of strawberry, pecans, THIS salad dressing and the feta cheese is amazing. I crave this salad!!! Its fabulous!

    WOW!! This recipe is yummy. Made it for a cookout with friends just last week and what a hit it was. Very interesting combination of flavors. Definately a keeper! Thanks for sharing.
