Flounder Almandine

I had some frozen flounder filets I had bought at Costco and wanted to do something just a little special rather than the ordinary. I found this recipe on the back of the bag containing the flounder. It is so good, quick and easy — and you will probably have all the ingredients on hand (as long as you already have the flounder Would be nice to serve with rice. Enjoy!

SERVES 4 (change servings and units)

    Preheat oven to 450 degrees F.

    Melt butter in shallow baking dish in oven (do not allow it to brown).
  3. 3
    Remove baking dish from oven and add the wine, lemon juice, salt and pepper.
  4. 4
    Arrange fish in baking dish; flip to coat with butter mixture.
  5. 5
    Bake in 450 degree oven 10 minutes per side, 20 minutes total, or until fish flakes easily with fork.

    Remove fish from pan.
  7. 7
    Stir almonds and parsley into butter mixture.
  8. 8
    Spoon mixture over fish to serve.

    Serves 4.

This was simple to make and tasty. I used olive oil instead of butter and it still tasted good.

    I love this dish. I had this in my "college students cookbook" from years ago and still use it. Instead of white wine, you can use tequila to give it a really unique taste. I always make extra sauce and drizzle it over brown rice...yum! You can easily make this in the microwave also with a glass dish and cover it with cling wrap.

    Delicious. I used 1/2 lb. flounder fillets, but kept all other ingredients as is, except that I used lime juice instead of lemon, and used slivered Cubanelle pepper pieces instead of slivered almonds, as I did not have them on hand. Also, I basted the fillets twice while baking to ensure no drying out, and added the peppers on top of the fillets for the last 10 minutes of cooking. Thanks for this beautiful recipe. I served with a Knorr pasta dish, and steamed green beans.
