Baked Delicata Squash With Lime Butter

I spotted these colorful squash at a farm stand in Vermont last weekend - I brought them home and scoured the Internet to find out what to do with them! I found the following recipe on whatscookingamerica.net. The squash turned out to be delicious, with delicate, edible skin. The tangy/spicy butter topping complemented the mild squash perfectly.

    Preheat oven to 350 degrees.

    Cut squash in half lengthwise and remove fibers and seeds. Place cut-side down in a glass baking dish and add water to the dish to a depth of 1/4 inch.

    Bake 30 minutes or until squash is soft but not mushy. Remove from oven.

    In a small bowl, combine butter, lime juice, and chili powder; stir until well blended. Season with salt and pepper.

    Spoon the butter mixture into baked squash cavities and serve hot.

    yummmm, due to a dinner interuption I had to let mine sit for 30 minutes or so after I had poured the butter lime mixture into the squash, and it had absorded into the flesh of the squash, oh my it was delicous!!!!

    I just happened to be baking squash and wanted something different to add. The chili powder and lime juice were unexpectedly good additions. I might add just a bit less chili powder next time. Thanks for sharing the recipe.

    For me, baked delicata squash with butter and a bit of salt merits five stars. This is a lovely alternative, and much prettier. My one squash was a pound and a half so each half was 3/4 lb. Thus it took an extra 15 minutes in the oven to become tender. Overall, it was scrumptious.
