Cajun-Style Red Beans and Rice

This is a hearty Southern dish, easy to make and full of flavor and quite spicy! I sometimes add in cooked ground beef, you can add in some chopped cooked bacon or use spicy dryed smoked sausage to the beans for smokey flavor! I also like to add in some Creole seasoning.

SERVES 4 (change servings and units)

    Heat oil in a large skillet over medium heat.

    Add in onions, garlic green bell pepper and crushed chili flakes; saute until veggies are soft (about 8 minutes).

    Sprinkle with chili powder and paprika, cook about 1 minute.

    Add in tomato sauce, stewed tomatoes and hot sauce (if using) season with salt and add in sugar to taste if needed.

    Add in beans, cooked ground beef and bacon if using; mix to combine and simmer for about 1 hour.

    Serve mixed or over rice topped with a dollup of sour cream if desired.

    I made this for a themed party and everyone loved it! I have never made anything Cajun before. Ths recipe is great!

    What a delicious recipe!!! I made this for "fat Tuesday" for my husband and his brother...they loved it...used lesser measures of the spices and hot sauce...this is definitely a keeper...thank you for submitting it.

    JQ and I must have been humming the same happy tune devouring this one. This was my first time making Red Beans & Rice with a tomato based sauce and boy did we love it. I made this into a low fat dish by using just 1 tablespoon of oil, replacing the sugar with Splenda and omitting the bacon. I did add 2 chicken andouille sausages all sliced up and served it on top of brown rice. For Weight Watchers, my dish was Core plus 1 point per serving for the sausage or 6 points plus whatever amount of rice used. Thanks so much Kitten.
