Spinach Meatballs

This recipe provided by Texas Beef Council. It is lean and packed with iron. Baked, not fried and can be frozen.

SERVES 4 (change servings and units)

Ingredients

Directions

    Preheat oven to 350°F.
  2. 2
    In a medium bowl, combine ground beef, spinach, egg, onion powder, garlic powder, bread crumbs, salt & pepper.
  3. 3
    Mix all ingredients well and form into small meatballs.
  4. 4
    Place meatballs on jelly roll pan and place into preheated oven; bake for 40-50 minutes (depending on size of meatballs).

    While meatballs are cooking, prepare pasta according to package directions, drain and keep warm.

    In a large skillet or sauce pan, pour jar of prepared spaghetti sauce.
  7. 7
    When meatballs are fully cooked, remove from oven and place in sauce.

    Simmer on medium heat 6-8 minutes.

    Serve meatballs and sauce over cooked pasta.
  10. 10
    Top with grated Parmesan cheese.

    I made the meatballs only for OAMC. I tripled the recipe to make about 100 meatballs that I froze in 6 packages of 16 meatballs each. (We ate a few meatballs as they were cooling because they smelled so good!) I only used 2 packages of spinach because I was afraid the "veggie-avoiders" that I feed might get suspicious. So far, I have used the meatballs in one recipe with great results.

    This was really very easy and tasted great. I also used the QuickPastaSauce recipe but instead of serving with pasta I put it on long buns and served with cheese. DS loved it said tasted like Subway.

    These meatballs were flavorful and easy enough for a tired weeknight. I used Quick Pasta Sauce (Quick Pasta Sauce) instead of the jarred sauce and penne pasta. I love the added spinach, as we can all use a veggie boost in our diets.
