Green Rice

This is a great way to serve rice. The 'green' comes from parsley and green onion. Very tasty and easy! Found this in 2002 Quick Cooking Recipes.

Ingredients

  • cup green onion, chopped
  • cup fresh parsley, minced
  • tablespoon olive oil
  • tablespoon butter
  • 1 1/2 cups long grain rice, uncooked
  • cups chicken broth, water and bouillion can be used instead
  • 1/4 teaspoon cayenne pepper
  • 1 bay leaf
  • Directions

    1. 1
      Melt butter and oil in skillet and saute rice for about 3 minutes, until rice begins to brown a little. Be very careful not to burn.

      Add onion and parsley and saute for another minute or two. Stir constantly during these two steps.

      Stir in broth, cayenne and bay leaf.

      Bring to a boil.

      Reduce heat.

      Cover tightly and cook for 15 minutes. DO NOT LIFT THE LID WHILE IT IS COOKING!

      Fluff rice with a fork and serve!

    This is a great side, really easy & tasty. I did this alongside some kashmiri lamb & it was great, I made as directed but next time will do it in the rice cooker which should work just as well. Thanks Mama!!

    This is a lovely and flavorful rice dish! We had it with grilled salmon and it was a wonderful pairing. I will make this one again for sure! Thanks mama!

    I love this! It was so easy prepared in my rice cooker! I sauteed rice, parsley and green onions in my rice cooker with olive oil and butter before adding in the chicken broth, cayenne and bay leaf. Cooked on the regular cycle ~ and there you have it! Thanks for a delicious rice dish, Mama's Kitchen!

    Delicious, easy to prepare and a good way to use up some excess parsley. I think I might add just a smidge of garlic nrxt time, but not too much.
