Corn Dog Muffins

I made these for two picky young boys who stayed with us while their dad was in the hospital. It went over so well I had to make another batch! They are also a great item to store in the fridge for snacks or lunch boxes. Eat cold or heat for 30 seconds in a microwave. Hope yor picky eaters like them as much!

Ingredients

  • 2 (8 1/2 ounce) packages cornbread mix
  • tablespoons brown sugar
  • 2 egg
  • cup milk
  • 1 (11 ounce) can whole kernel corn, drained
  • 5 hot dog, chopped
  • cup cheddar cheese, shredded
  • Directions

    1. 1
      Combine mix and brown sugar, add eggs and milk stirring only until moistened.
    2. 2
      Stir in drained corn, hot dogs, and cheese. Batter will be thin.

      Fill paper lined muffin cups 2/3 full.
    4. 4
      Bake at 400 degrees for 15 minutes or until tops are brown.

      Serve immediately or refrigerate.

    These were delicious. They really tasted like a corn dog without the yucky stick flavor, lol. I did make some changes. I used 1 and 1/4 tbs. brown sugar...and chunks of velveeta cheese (reheats and melts better) and 3 hot dogs. Perfect! I will be making these again.

    Great idea for a quick snack or something different for lunch. Two muffins with a green salad was very filling. Very corn dog-like in flavor and I loved them. Made 24 muffins. Thanks, mama's kitchen.

    I did not have the corn, so I omitted it and we ate the muffins with broccolli and carrots on the side. I did not add the sugar, they were a tad "sugary" in our opinion, I think we would like these if we used regular cornmix though. We are not huge fans of the pre-packaged cornmeal mix. It was overall a quick recipe and very filling.

    nice comfort food, kids liked it, easy to prepare. Froze well so we had them handy for after school snacks for the kis to pop in the microwave
