Avocado With Groundnut Dressing

A very simple to make salad from Ghana with really complex flavors. Make it as spicy as you like by using hot instead of sweet paprika and upping the cayenne.
SERVES 4
Ingredients
- 2 avocados, ripe
- 1 tablespoon lemon juice, fresh
- 2 tablespoons peanuts
- 1/2 teaspoon paprika (sweet or hot(to taste)
- 1/2 teaspoon cinnamon
- cayenne (to taste)
- salt (to taste)
- chives, fresh, as a garnish
Directions
1
Peel the avocados, remove the pit and cube the flesh.2
Place in a bowl with lemon juice.3
Grind the peanuts so you have small chunks.4
Sprinkle the nuts and spices over the avocado and toss gently.5
Garnish with chopped chives.

My whole family was so impressed with how yummy this strange avocado treat was! My DD that normally doesn't like avocados actually ate this right up! Made for ZWT4 - Los Jefes de la Cocina.

I loved the flavors in this simple avocado salad! This is well worth the try! I put the peanuts and spices in a bag and crushed them together - they were a wonderful complement to the lemon and avocado.
