Granny's Welsh Cakes
SERVES 6 , 36 -48 cookies
Ingredients
- 4 cups flour
- 1 cup margarine or butter
- 1 cup sugar
- 4 eggs
- 1 cup raisins or currant
- 4 teaspoons baking powder
- 1 teaspoon salt
- 1 teaspoon vanilla
Directions

Beat margarine & sugar together.2
Add eggs & beat till smooth.3
Add dry ingredients & stir till just nicely mixed.4
Roll out on floured surface to 1/4 to 1/2-inch thick.5
Cut into rounds using a small glass or round cookie cutter (we've always used a small glass).6
Cook in frying pan till nicely browned on one side; flip & brown the other side. (approx. 3-4 minute per side).7
Remove to baking rack to cool.8
Store in an airtight container or ziplock bag.

a might bit too eggy for my tastes. prefer the melt-in-your-mouth texture of the milk recipe, but still a very good welsh cake.
