From Light and Tasty Jan 2003. Quick and easy appy with tons of flavr. Posted for World Tour 2005.

SERVES 8 (change servings and units)

Ingredients

Directions

    Seperate each pita into 2 rounds, making 4 rounds of bread.
  2. 2
    Cut each round into 4 triangles - you will have 16 triangles total.
  3. 3
    Place each triangle inside up on a lightly greased or sprayed baking sheet.
  4. 4
    Combine remaining ingredients except for mozzarella and spread over triangles.
  5. 5
    Sprinkle with mozzarella.
  6. 6
    Bake at 400 degrees for 12 - 15 minutes or until golden brown.
  7. 7
    Watch carefully so they do not burn.

These were a nice and simple snack!! Probably added a bit more cheese, I very rarely measure cheese — just eyeball until it looks yummy!!! Used regular pita instead of whole wheat.

    Oh these are good!!!!! I left off the mozzarella cuz I wanted to use these for dipping in some hummus. Loved them!!! Made for ZWT4.

    Seriously scrumptious! I used minced onion and garlic instead of the powdered varieties: very easy with a small processor. And I added 1/2 teaspoon of dried basil. I'll be making these again - and againand again! Despite the cheese, still reasonably low in fat. Thanks for sharing!
