Chocolate Rice Noodle Haystacks

Recipe #141255 | 20 min | 20 min prep | 14 cookies (Change Servings)

RECIPE BY: flower7

These are some of my favorite sweets. Easy and sooooo good! I found the recipe in a church cookbook and made a couple adjustments after making it. The original recipe called for chow mein noodles but I prefer the rice noodles. Yield is an estimate as it depends on how big you scoop them

Posted on: Oct 12, 2005

Ingredients

  • ounces semi-sweet chocolate chips
  • ounces butterscotch chips
  • 1/2 cup creamy peanut butter
  • ounces rice noodles
  • cup mini marshmallows
  • Directions

    1. 1
Melt the chocolate chips, butterscotch chips and peanut butter on a reduced power in the microwave (be careful not to scorch!) (My 900W microwave takes 1.5 minutes on 70% power). You can also use a double boiler on the stovetop.
    2. 2
Stir in the noodles and marshmallows.
    3. 3
Drop by spoonfuls onto waxed paper and allow cookies to harden (may have to chill in fridge).

The rice noodles are a wonderful touch to this recipe! I should have made a double batch as they were gone in no time at all. I used organic peanut butter so the microwave time was a little more.... Thanks flower7
