Piquant Prince Edward Medley

This comes from Prince Edward Island Canada, (home of Anne of Green Gables fame.) It is a colorful blend of beans and carrots with a nice crisp texture. Posted for the Zaar World Tour to Canada, 2005.

SERVES 6 (change servings and units)

Ingredients

Directions

    Dice the smoked bacon and cook in a sauté pan until crisp.
  2. 2
    Drain crisp bacon on dry paper towels and reserve 2 tablespoons of Bacon Fat in a bowl.
  3. 3
    Mix the remaining ingredients into the Bacon Fat.
  4. 4
    In a hot pan, add the vegetables and heat until warm, stirring often.
  5. 5
    Add the Bacon Fat mixture and the crisp Bacon.
  6. 6
    Stir well in the pan and serve immediately.

I tried this dish but not too keen on it..My fault I think, over cooked the vegetables, came out a little too soggy, they did taste good but next time I won't over cook them

    This is a very interesting recipe. Quite easy to make, but a little different for our tastes. I found that the cider vinegar really overpowered the flavor, so the next time I try this I will probably cut back by half. The bacon and bacon grease added a depth that was welcomed, because overall it tasted like a sweet & sour type dressing. Of course since we're all used to Grandma's green beans with bacon and butter, it's just a matter of taste I think. Objectively, this has a lively flavor and I can see why it is a favorite for many! I did find, that eating this dish as leftovers the next day, was quite enjoyable — as a cold salad, rather than a warm dish. Overall, wonderful, easy to follow directions and quite a suprize to the tastebuds! Thanks for broadening our horizons, Laurie, with this recipe! Its' presentation is beautiful, and its' flavors are truly unique.
