Romaine Lettuce Salad With Cilantro Dressing

Ensalada de Lechuga con Aderezo de Cilantro from "Zarela's VeraCruz" — a lovely, simple salad with a very fresh taste--a wonderful palate cleanser after a main course.

SERVES 6 (change servings and units)

Ingredients

Directions

    Have ready a large bowl of ice water.
  2. 2
    Rinse the lettuce under cold running water, tear into bite-sized pieces, and let stand in the ice water to crisp for 10-15 minutes. Drain well and dry very thoroughly in a salad spinner.

    In a salad bowl, combine the lettuce, cucumber, and celery.
  4. 4
    In a blender, combine the cilantro and olive oil; process to a puree.
  5. 5
    Add the remaining ingredients and blend until smooth.
  6. 6
    Toss with the salad and serve.

This was a good salad but lacked flavor for us. If I make this one again, I'd use less oil and more seasoning. I love cilantro but the flavor just didn't come through for us. Thank you for posting.

    Fresh, crisp, flavorful, beautiful way to eat your greens! We did not have any cucumber, but we did add an avocado.... DELICIOUS!!!! A new family favorite, thank you!

    Great salad! Very simple tasting ingredients in the salad ,but it needs to be with the POP from that fabulous dressing. We were thinking that chunks of avacado would be outstanding added to the mix! Thanks so much Kate for posting this!

    This was excellent. Next time, I'll be adding sliced radishes and grape tomatoes for colour and flavour. Sliced bits of mango would be a very good addition too.
