Your Basic Quesadilla

This is one of the ways I make a simple quesadilla at home. Quesadillas made like this can be found at Mexican restaurants.

SERVES 2 (change servings and units)

Ingredients

  • tablespoon butter
  • 2 flour tortillas, whatever size you want
  • cup shredded cheddar cheese, more for bigger tortillas
  • salsa, however much and whatever heat you desire, for topping (optional)
  • sour cream, as much as you like, for topping (optional)

Directions

  1. 1
    In a pan skillet large enough to hold one of the tortillas flat, melt ½ of the butter.
  2. 2
    Fry one side of one of the tortillas, then remove it from the pan.
  3. 3
    Put the rest of the butter in the pan, then put the unfried tortilla in to cook.
  4. 4
    Immediately sprinkle the cheese on top of the tortilla in the pan, then top with the previously fried tortilla, browned side up.

    Press them together with a spatula and fry the quesadilla until the cheese is melted.
  6. 6
    Remove it from the pan and cut in wedges like a pizza.

    Top with sour cream and/or salsa.

    Enjoy!

    I make these frequently and I LOVE them! Sometimes I put sliced pickled jalapenos, cilantro, and/or meat of some sort (ham, chicken) in them to change things up.

    I've been making these for years, but never saw a recipe for them before. I don't use butter, and we like Swiss, jack, vegetable jack, jack and cheddar blend cheeses. We often add canned green chiles, black olive slices, hot sauce, avocado slices, bacon crumbles, and...well just about anything we have on hand! We have these for breakfast, lunch, dinner, or any time we want a quick tasty snack. This is the perfect "fast food!" Thanks for posting - something I never thought of doing - so everyone can enjoy!

    I had these quesadillas for a quick and yummy lunch. Added a little refried beans to the tortilla before putting them together in the skillet. So good!
