Cheesy Mushroom Baked Flounder

Delicious fish recipe. Works well with haddock, too.

Ingredients

  • lbs flounder fillets
  • 3/4 teaspoon thyme
  • 4 green onion, finely chopped
  • cup sliced mushroom (sometimes I use more)
  • cup shredded cheddar cheese (or monterey jack cheese)
  • tablespoons butter, melted
  • 3/4 cup breadcrumbs
  • teaspoon parsley
  • 1/4 teaspoon paprika
  • Directions

      Preheat oven to 350. Lightly spray or grease a 13" x 9" baking pan.

      Place flounder filets in prepared pan.
    3. 3
      Sprinkle filets with thyme and chopped green onion. Scatter sliced mushrooms over top.

      Evenly sprinkle shredded cheese over top.
    5. 5
      In a small bowl, mix together melted butter, breadcrumbs, parsley and paprika. Sprinkle over top of cheese layer.

      Cover and bake for about 30 minutes.

      Uncover and broil for about 2-3 minutes to lightly brown the top.

    Very good recipe, thank you! Here are the slight alterations I made: I don't "do" onions so I omitted them but I did add onion powder. I didn't have any fresh mushrooms so I used canned ( very good but fresh would have been great!) I also sliced a couple of plum tomatoes and layered them on before the cheese. It came out wonderfully and the hubby loved it too!

    Wonderful!!! I baked mine for 20 minutes because they were very thin fillets. Long story short, DH made a face when I brought flounder home from the grocery store. Well, I can tell you that he ate 2 pieces and declared it the best tasting fish he's had in awhile! Thanks!

    Although the flavors of this dish are outstanding, there seems to be an error in the cook time of the flounder. I recently saw a similiar recipe in Eating Well and it called for 12 minutes of oven time. My fish was like mush with 30 minutes of cooking as stated in this recipe.
