Spring Roll Dipping Sauce / Nuoc Mam

From Kim Son Restaurant in Sugarland, TX and altered to make it even better. They spelled it Muoc Mam. I used to CRAVE this sauce on spring rolls and salads. It is so yum! I do not know how many servings this would make. See Kimson.com for more of their recipes.

    Combine water, vinegar and sugar and cook for 3-5 minutes stirring to dissolve sugar.

    Remove from heat and add fish sauce.
  3. 3
    Add shredded carrots and mint.
  4. 4
    Taste and add more fish sauce and cayenne to taste.
  5. 5
    Cool before serving.

    Chopped chili peppers and finely chopped peanuts may also be added to warm sauce and then allowed to cool.

    We are really enjoying this. We go to a neighborhood restaurant and order spring rolls. It comes with this sauce and lettuce leave ( bibb lettuce, I think) and you wrap the roll in the lettuce and then dip in this sauce. YUM! Now, I can do this at home. Great recipe! Thanks!

    This was excellent. I cut it in half and still had way too much, not sure if I can store it or not. next time I will make about 1/4th. I am only serving two people. Thanks for this recipe! Oh, I may add chili paste next time too, I like the spice. Good job creating this recipe!

    I have been searching for this recipe ever since the local vietnamese restaurant closed. Served with Goi Cuon (Vietnamese Cold Spring Rolls) made with only shrimp. I was in heaven. Definitely deserves more than the 5 stars I am limited to. Thanks so much for posting.
