Icelandic Cocoa Soup

Recipe #137355 | 15 min | 5 min prep | SERVES 4 (Change Servings)

RECIPE BY: Kumquat the Cat's friend

Posted for Zaar World Tour 2005. Just picked this recipe up when I was in Iceland from a cookbook called Cool Dishes. I think kids might really like this recipe, and it's relatively healthy too! A dessert soup might tickle their fancy. The book recommends serving this with crumbled rusks. Have not tried this recipe yet.

We enjoyed this quite a lot. I used potato flour hoping that it might make it thicker, but it did not. That said, we still thought it was very tasty. We would have liked it a bit sweeter I think, but that is personal preference. I used skim milk which made this very low fat. This would be particularly good in cold weather. And some homemade pound cake croutons would make it almost decadent!

The kids loved this and I liked it too. It didn't thicken up much at all with the cornstarch so adding a bit more is probably not a bad idea. The sugar proportions were spot on for taste.

This is delicious, and even the hubby liked it! It's not a thick soup, even though I cooked 1 minute after adding the cornstarch. But we liked it the way it is. I made a half recipe, which was enough for my family of 4 (2 adults and 2 little kids). Thanks Heather!

Truly an original! It had a great flavour. I was expecting it to turn out a bit thicker after the addition of cornstarch. It stayed thin for us. I will probably try it again. Most likely, I will leave it on the heat a little longer to try and thicken it that way. Thanks for posting though! My family really enjoyed the idea of a chocolate soup!
