Finnish Cranberry Whip (Vatkattu Marjapuuro)

I found dessert this especially for the World Tour. It looks ridiculously delicious!

Ingredients

  • cups fresh cranberries
  • 1 1/2 cups water
  • cup granulated sugar
  • cup water
  • dash salt
  • 1/3 cup farina
  • Directions

    1. 1
      Heat cranberries in 1 1/2 cups water to boiling; reduce heat. Simmer uncovered until berries pop, about 8 minutes.
    2. 2
      Press cranberries through sieve to remove skins. return juice to saucepan. Add sugar, 1 cup water and the salt; heat to boiling.
    3. 3
      Add farina gradually, stirring constantly. Cook, stirring occasionally, until thickened, 3 to 5 minutes.

      Pour into small mixer bowl. Beat on high speed until pudding becomes fluffy and light pink, 3 to 5 minutes.

    I made this tonight, except instead of Farina, I used cream of rice, so that my DH with his potassium limited diet could have some. I did have to increase the amount I used by 1/4 cup to obtain the proper consistency. All together though even with the subsitution this was darned good, EddieBear enjoyed it without complaining, and so did I. Very delicious, and well worth the making. Thank you so much for sharing this recipe, I will be making it again and again.

    Apparently when I tried to review this before it was lost in translation...I made this last week and I'm making it again already! Great recipe! Very different-I had people ask me if it had whipping cream in it. Perfect balance of sweet and tart, thanks!

    We were mixed here. I liked it but the rest of the family found it way too tart. Interesting flavor and I'm glad I tried it.
