I found a similar recipe on the web and wanted to reduce the fat content without losing the flavor. This was the end result. The bacon and bacon fat are minimal but a must for the proper flavor.

Ingredients

  • slice bacon, diced
  • medium red potato, scrubbed and diced in 1/2 inch cubes
  • 1/2 cup red onion, chopped
  • 1 1/2 lbs green cabbage, coarsely chopped
  • 2-3 teaspoons red wine vinegar
  • 1/4 cup hot water
  • teaspoons caraway seed, crushed
  • salt and pepper
  • Directions

    1. 1
      In a heavy skillet, fry bacon until crisp, do not drain.
    2. 2
      Add potatoes and onion, cook until lightly browned.
    3. 3
      Stir in cabbage, vinegar and hot water.
    4. 4
      Continue to cook over medium heat until cabbage is wilted and potatoes are fork tender; stirring frequently.

      The water should cook out, if needed raise heat and continue to cook until the cabbage and potatoes are lightly browned.
    6. 6
      Sprinkle the caraway seeds over all and adjust salt and pepper to taste.

    So tasty! I love the intense licorice flavour of the caraway seeds. That really made the dish for us! I replaced the bacon with a slice of salami when I realized we were out of bacon, and it worked out just fine. Very quick to throw together! Thanks Paula!

    Paula, this was FANTASTIC!!! I followed your recipe exactly except that my kitchen help (DW) forgot to buy a red onion and I was forced to use white. It made little difference. This dish was easy to make and the texture and flavor were perfect. I can't wait to make it again. Thanks for another great recipe!!

    This is fantastic, the red wine vinegar and caraway seeds makes this recipe! I also added in a couple teaspoons of brown sugar. Thanks for sharing this recipe Paula!...Kitten

    This is a great side dish!! DH and I both loved it! Only thing I did different, I skipped the bacon and used olive oil. Wonderful flavors! Thank you!
