Easy Beef Liver With Onion and Tomato

This is from a supermarket (Shop Rite) recipe card. I haven't seen tomato with this combo before and that sounded interesting. I like to use calf's liver.

SERVES 4 (change servings and units)

Ingredients

Directions

    Melt 1 1/2 tablespoons butter in skillet over medium heat.
  2. 2
    Add tomato, onion and basil. Season well and cook for 20 minutes, stirring occasionally.

    Dredge liver in flour.
  4. 4
    Melt remaining butter in frying pan over low heat and cook liver 3 minutes and turn over and season with salt and pepper and cook for another 2 minutes.

    Serve with the tomato and onion mixture on top.

Yummy! I used veal liver and seasoned my flour with Hungarian paprika, garlic powder, salt and pepper. I cooked my onion first (did not use the tomato at all), in my wok with the butter. When they were soft, translucent and had made a nice bit of liquid, I added some of my seasoned flour to make a nice gravy. I coated my liver then and pan-fried it according to the directions here--perfect. I cooked brown rice and layered liver over it with onions on top. Will defintely make again.
