Make a batter of the eggs, flour, salt, nutmeg and milk by puréeing them in a blender until smooth.

  4. 4
Pour batter into the skillet and put the skillet on the top rack of the oven.
  5. 5

  7. 7
Heat the remaining butter in another large skillet, add the slices, sprinkle with sugar, and sauté over high heat until apples are browned.
  8. 8
Spread them over the pancake, make a row of lemon slices across the top, and sprinkle with the confectioners' sugar.

Excellent! The pancake was a wonderful consistency, and the apples pulled it all together. (I didn't use the lemon slices; personal preference.) This made an excellent Shrove Tuesday dinner, and it'll make excellent breakfasts in the Sundays to come! -j

This reminds me of my mom's oven pancake, light and airy but somehow very filling! I love the apples on top-I used about 6 small, sweet, saucy apples so reduced the sugar to 1/2 Tbsp. Also didn't use the powdered sugar as I didn't want it very sweet, but the kids had cinnamon and sugar on theirs. This was delicious, just what I wanted for breakfast. Thanks!
