I got this one from Quick Cooking magazine. These muffins are delicious. These are great for a snack, appetizer, bake sale, or food gift. Really good served with cream cheese also.

1 dozen regular size muffins (change servings and units)

Ingredients

Directions

    In a large bowl, combine flour, baking powder, and sugar.
  2. 2
    In another bowl, beat milk and mayonnaise until smooth.
  3. 3
    Stir into the dry ingredients just until moistened.
  4. 4
    Fold in the bacon, tomatoes, and parsley.
  5. 5
    Fill greased or paper-lined muffin or mini muffin cups 2/3 full.
  6. 6
    Bake at 400° for 20 to 25 minutes or until a toothpick inserted comes out clean.

    Cool for 5 minutes before removing from pan to a wire rack.
  8. 8
    Serve warm.

I made this recipe out of curiosity - very unsual ingredients. The recipe was very easy to make, the muffins came out beautifully - great colour and texture, and lovely spicy aroma thanks to the parsely. Definitely something different. I wasn't too sure at first, but the taste grew on me. Delicious straight from the oven with some butter. Worth making again for something different from the norm.

    Quite good!! I too was unsure while preparing the batter, but turned out great! For you WW ladies and gents these muffins work out to 4 pts each using the recipe as stated.
