Chinese Roasted Chicken

When I first left home I shared a flat with a chinese girl and this is one of the ways she would cook chicken. The marinade is sticky and yummy and smells wonderful.

SERVES 6 (change servings and units)

Ingredients

Directions

    Marinate chicken pieces in all the other ingredients for at least 2 hours, turning pieces now and again.
  2. 2
    Arrange in a single layer in a roasting dish and cook in a moderate oven (160 C / 325 F) for 30 minutes, turn pieces and cook a further 25 minutes.
  3. 3
    Serve hot or cold (cooking time includes marinating time).

Very tasty and flavorful chicken! I marinated 24 hours. I used a whole young chicken cut up into pieces. My marinade never became sticky so I wonder if more honey or the addition of brown sugar is needed to get that affect? My husband was not really excited about this one, but I enjoyed it. It is even good cold the next day!

    I tried this with chicken breast and turned the heat up to 425° after the first ten minutes. Because I tried to rush things, the marinade never had time to get sticky, so don't do what I did.

    Excellent marinade for chicken. I used 2 garlic cloves and 1 tsp of sesame oil, just right for your tastes. It cooked up beautifully in the time posted. I did use the broiler for the last few minutes. I served this with steamed rice and pea pods. I will be making this quick and simple recipe again and soon. Thanks for sharing this recipe.
