Baked Buffalo Chicken

These buffalo chicken breasts are as good as buffalo chicken wings without all of the mess.

SERVES 4 (change servings and units)

Ingredients

Directions

    Preheat oven to 400 degrees.

    Spray skillet with cooking spray. Add chicken and cook 4 minutes each side until browned.

    Place chicken in an 11 x 7 baking dish coated with cooking spray.
  4. 4
    Combine hot sauce and next 4 ingredients. Pour over chicken and bake uncovered for 25 minutes. Serve with dressing.

I used Frank's hot sauce. The chicken had some zing to it. I may choose another type of hot sauce next time. It was good and easy.

    This recipe is definitely a keeper! As some others have suggested: you can skip the 1/2 cup fat free blue cheese dressing (approx 180cals in total) and the meal is still delicious!

    This was absolutely yummy, and very easy!!! I like that I could eat "buffalo" sauce without all the fat! I made extra sauce to drizzle over the chicken when it was cooked, and I "scored" the chicken breasts so they would have more of the sauce on them. Marinated them in the sauce for about 1/2 hour first. It was a lovely warm night so I grilled them on the BBQ. Served them with creamed spinach, which went very well with them. Thank you Sherribabi - what a fun recipe!

    Very satisfying & flavourful way to do chicken - tasted just like wings! I browned the chicken on the Foreman Grill. I think next time, I will double the sauce so the chicken ends up saucier. We don't care for blue cheese dressing so I just served with roasted potatoes & they were great!
