Yosi's Israeli Salad

This kosher salad was posted for the World Tour 2005 RecipeZaar event. The source is The Hadassah Jewish Holiday Cookbook - Traditional Recipes from Contemporary Kosher Kitchens. DH and I love the flavors of this simple salad. The fresh herbs really make this dish. As a bonus, it's also a South Beach diet friendly dish.

Ingredients

  • small plum tomato
  • 2 cucumber, peeled
  • 3 scallion
  • 1/2 cup parsley (flat leaf variety)
  • 1/4 cup fresh mint leaves (optional)
  • 1/4 cup chopped fresh dill
  • 3-4 tablespoons olive oil
  • 1 lemon, juice of
  • salt
  • pepper
  • Directions

    1. 1
      Finely chop the vegetables.
    2. 2
      Lightly mix with the remaining ingredients.
    3. 3
      Serve at room temperature.

    An easy and delicious salad that was a snap to make. I used the mint but had no fresh dill. I'm sure it would have been even better with the dill. Thanks!

    I added the mint and a little extra dill, a great salad! This is very simple to make and tastes amazing!

    Most of my favorites in one dish! I agree with mama - the mint is a must as well as the full monty of the parsley & dill. I enjoyed the heck out this & will make it often! Thanks!
