Pumpkin Soup

A thick hearty soup. Delicious served with a fresh dinner roll.

SERVES 6 (change servings and units)

Ingredients

Directions

    Saute onion and green onion in margarine in large saucepan.
  2. 2
    Saute until soft.
  3. 3
    Mix in flour, salt, pepper and ginger.
  4. 4
    Add first amount of vegetable stock, stirring until boiling and thickened.
  5. 5
    Process in blender to smooth.
  6. 6
    Stir in second amount of vegetable stock, pumpkin and cream.
  7. 7
    Heat through.

An awesome soup!!! We loved it! I even forgot to put in the cream and it was fantastic! I did top it with a shake of curry and a shake of nutmeg along with a dollup of sour cream ontop (following all the wonderful suggestions on the reviews.) Which added a wonderful spice. I put it in pumpernickel bread bowls and it was a very fulfilling dinner for my husband who is a bottomless pit. I am bringing this as my dish to Thanksgiving. THANKS!!!

    Very easy to make. However a little bland. I don't remember last time I had pumpkin soup so I don't know what to compare it to. But I will try it again.

    This is excellent if you make special croutons to float in the soup. Butter 4 or more slices of white or whole wheat bread and sprinkle with cinnamon sugar. Broil for 1-2 minutes. Cut into 1 inch cubes. Enjoy

    Substitute whole milk for cream, use Knorr's Vegetable Bouillon cubes instead of vegetable stock. Reduce margarine.
