Mama's 'bestest' Biscuits

Recipe #134775 | 20 min | 5 min prep | add private note

My kids named 'em this 'cuz they is soooo good! LOL Great with soups, stews, jams, jellies or just by themselves. Who ever said homemade was hard just didn't know Mama! Extra note: Edited 3/07 to answer questions and help you make these come out perfectly. You can even add garlic powder and cheese to make those 'famous restaurant type' biscuits, BUT BETTER. Edited 8/08 to add yes these are basic biscuits. To add additional flavor try adding in herbs and seasonings as stated in the previous edit above. Onion powder, garlic powder, fresh cracked black pepper, herbs like oregano or rosemary. You could even brush the top with melted butter when done baking or add some Butter Buds or Molly McButter if you like. This also doubles very easily.

Ingredients

Directions

  1. 1
Mix flour, milk and mayo together.
  2. 2
Turn out onto a floured board or counter top. Sprinkle some extra flour on top of the dough. Just enough to make the dough easier for you to work with and not so sticky. You want to get it just to the not too sticky point but not add so much flour that they become dense. It is hard to say how much as this varies with the climate and humidity.
  3. 3
Knead lightly just until the dough is smooth-about 6 times. The less you handle it, the better the biscuits!
  4. 4
Pat into a square shape and make long cuts with a very sharp knife from top to bottom and then side to side--like a tic tac toe board and you will havce 9 biscuits. Add one extra line to make 12 squares. I usually cut to make 12, but make them as large or small as you like.
  5. 5
Place on lightly greased or sprayed cookie sheet just a tiny bit apart- about 1/2 inch- and bake at 450°F for 15 to 20 minutes or until browned on top.
  6. 6
Brush the tops of biscuits with butter or spray with butter spray and serve immediately.
  7. 7
Note: Don't have any self-rising flour? Add 1 tsp salt and 1 T baking powder to the flour.

These are excellent biscuits when you need some in a hurry without too much mess and worry. I still prefer the traditional ones on occasion though. But these are good, basic biscuits. Thanks!

They were ok, but very small and nothing spectacular. I am going to try them again though and will only make 9 rolls and maybe add some other ingridients as this is a very nice and easy basic recipe.

Made these again tonight with a few modifications... I replaced half a cup of the regular flour with whole wheat flour (i've tried it with a whole cup, and it was too dense), used an extra 1/2 tsp of baking powder (see my attached original review to see how to sub for self rising flour with baking soda), and miracle whip light with a 1/2 tsp of margarine melted into it for the fat. Came our REALLY well, very nice texture with the whole wheat flour in it, and tasted amazing with some margarine and raspberry jam! Next time I think I'll try adding some herbs for herb biscuits! Oct 16th/05 ***** Amazingly good, especially considering how little goes into them - a wonderful easy biscuit recipe! I used regular flour, 3 tsp of baking power, and 1/2 a tsp of salt and they came out perfectly... I also just pulled pieces off the dough ball, hand flattened them, and put them on the cookie sheet - I avoid rolling dough whenever possible! Will definately be using this recipe over and over! — posted Oct 16, 2005

Updated: This should be saved in everyone cookbook! They are so easy to throw together when you do not have the time to make rolls for dinner. They are a perfect texture and only three ingredients!!! These are wonderful for breakfast or dinner! "Oct 7, 2005 OH MAMA!!! were these ever good! These were so easy to throw together too!!! I cut mine into mini loafs and put them in the pan side by side. They were beauriful! Also, I did not have a full cup of milk so I added half and half to make the difference and it worked perfectly. Thanks Mama!!! — Oct 7, 2005"
