My lovely newlywedded niece Karin, explained this recipe to me when I told her what my schedule might be like this fall. It sounds easy & yummy enough to submit.

SERVES 4 (change servings and units)

    Preheat oven to 350°F.
  2. 2
    Marinate the chicken in the BBQ sauce in the fridge during the day.
  3. 3
    Put chicken in baking dish & bake for about 1 hour.
  4. 4
    Top with cheese & bake another 5 minute until cheese is melted.
  5. 5
    Serve it up & enjoy!

    Everyone enjoyed this chicken! This is a pretty easy recipe. I marinated the chicken overnight and used bone-in chicken breasts. The three year old liked it the most; this is a very kid friendly recipe.

    After exactly an hour, my thick chicken breasts were pretty dry on the inside... I wish I'd have checked them a lot sooner. I was surprised that marinating them for hours didn't really soak the flavor into the chicken more. After the chicken was cooked, we decided that the cheese just didn't sound good on top of the spicy BBQ sauce, so we ended up leaving it off all together. (I think with a mild sauce it would have been fine, but something about the cheese and the spice just didn't appeal to us.) So I guess I only made 1/2 the recipe, but still, I'd have to play with it a lot before I'd try it again. Thanks anyway!

    The chicken came out very moist and tender; I don't know why we didn't enjoy the flavor more than we did. Maybe it was just an off night or no one was really in the mood for bbq or something. If we try it again and like it more, I'll rerate. It was worth a try anyway. I wish we had liked it better as it was so quick and easy.
