Spicy Mozzarella Beef Dip

My fiance "invented" this dip. He was just learning how to cook and this was the first thing he created without a recipe. Over the years, he has perfected it. It is now a family favourite. My FIL and step-daughter can't get enough of this. Every year, we get the family all together for the town Christmas parade then RUN back to the house for this dip and hot chocolate. It is the best part of the entire night!

SERVES 5 (change servings and units)

    Brown the ground beef in a large pan.

    Add the bacon bits, peppers, and the onion.
  3. 3
    Add taco seasoning packet and prepare according to back of package.
  4. 4
    After water has been absorbed, add the cheese in small amounts. Stir in between handfuls to insure that the cheese is melted.

    Add the tomato, stir it inches.
  6. 6
    Put in crock pot to keep it warm. He usually preheats the crock pot to high. And then after dumping it all in, turns it down to low.

    He likes to leave it on low for about an hour or so. It really helps to blend the flavours. There is no reason why it can't be eaten right away though! Or even leave it on all afternoon.

    Use the corn chips to scoop up the dip. You can eat it straight out of the crock pot fondue style or dish it into little bowls for individual servings.

    This was a good dip. It was very filling. I thought it needed more flavor, so I added some garlic, more onion, sour cream, and some picante sauce. We ate it with tortilla scoops. I might not make this again as a dip, just because I have some better dip recipes that I like better. But this would be great to use as taco meat or to use to make some walking taco's.

    Awesome TexMex meal! Went together really fast and tasted great! I used pepper jack cheese and tortilla chips. Seemed like it needed extra liquid when in the crockpot so I added about a cup of salsa. Family loved this! I keep browned ground meat in the freezer in 1 lb packages so I just heated it, did the taco seasoning, and melted the cheese in the removable pot in the microwave and then put in the base. Could not be easier! Thanks Saturn! I really did not feel like cooking today! This fit the bill!

    I am rating this according to everybody else who ate it...I didn't even get a taste!! Anyway, took it to a birthday party and my dish was the only empty one at the end of the night! The only thing I did differently was to add about 4 ounces of cream cheese to it along with the Mozzerella and instead of putting it in the crockpot, I baked it for about 20 minutes before we left for the party. I will definitely be making this one again!! Thanks!
