Linguine With Clams, Pancetta, Chili and White Wine

This recipe came from a show I was watching with Jamie Oliver. I have served it several times to seafood lovers and it is a hit. Paired with a nice white wine and salad it is a wonderful dinner.

SERVES 4 -6 (change servings and units)

Ingredients

Directions

    Cook pasta as directed. Drain.
  2. 2
    Meanwhile in a hot deep skillet, heat olive oil. Add pancetta. Fry until golden.
  3. 3
    Add shallots, garlic and crushed red pepper flakes to skillet. Stir well. Sautee until veggies are tender about 3 minutes.

    Add clames and white wine. Bring to boil.
  5. 5
    Cook until clams open. Discard any that have not opened.
  6. 6
    Remove from heat and add linguine,parsley, salt and pepper. Toss until all is combined well.
  7. 7
    Serve.

This is soooo delicious! Thank you for posting. I did not have shallots but it was still amazing. I am sure the shallots will make this a 6* recipe. All I added was about 1 tbsp of lemon juice, only b/c I thought I'd read it in the recipe, but didn't. A really nice twist on plain old Linguine with clam sauce.

    Very easy, flavorful recipe! I've made this several times now and the sauce is absolutely delicious, dh & I both enjoyed this. I made no changes at all. thanks!

    We enjoyed this very much. I did sub mussels for the clams because they were too expensive here in Holland. There is nothing else I did different, I made it exactly as written.
