Inspired by the sleeper hit Napolean Dynamite. I dedicate this recipe to all fans of the movie and to the Kips and Napoleans of the world. Your pet llama may like this, too. Yes!

SERVES 1 , 6 quesadillas (change servings and units)

Ingredients

Directions

  1. 1
Arrange one flour tortilla on Corning Ware dinner plate (the brown and orange one with the wheat design circa 1971).
  2. 2
Grate a significant amount (1 cup?) of Velveeta onto the tortilla.
  3. 3
Nuke about 60 seconds or until Velveeta starts to bubble and get "crispy" around the edges.
  4. 4
In the meantime, write some poetry -- Your sandy hair floats in the air -- To me it's like a lullaby -- I'm just flying by -- Oh so high -- like a kite -- tied to a skate --.
  5. 5
Next, spoon on some Pace Piquante (puh-conny) sauce if desired. Repeat process five more times.
  6. 6
    Peace out.

This recipe is flippin' sweet! I make it every time my grandma goes out of town, but I don't share it with Tina-the fat lard!

I've been doing this for years. My parents would make fresh flour tortillas when we had burritos or chili. The leftover tortillas were often mixed with whatever cheese and salsa or burrito/enchilada sauce was leftover from the previous meal. Great snack as well as quick meal.

I don't know about our pet llama, because there were no leftovers to give to him. I admit I cheated, and used the different color Corning Ware plate, and we only had the red lid - HOT -Pace on hand. The best thing about this recipe is that you don't even need silver ware! Just roll it up and you're set. If you grate the Velveeta ahead of time, you can make one of these tasty treats in about 2 minutes. Thanks for sharing, Cookgirl!
