Classic Macaroni Salad - Made Lighter!

This is a great recipe for healthier macaroni salad. Very creamy and lots of flavor. Great side dish to burgers, such as Greek-style turkey burgers, Greek-style turkey burgers.

SERVES 6 -8 (change servings and units)

Ingredients

Directions

    Cook macaroni according to directions, drain and rinse with cold water and let cool completely.
  2. 2
    Combine mayo, pickle relish, sugar substitute, mustard, salt and pepper to make dressing.
  3. 3
    Mix together pasta, celery, carrots and onion; then gently mix in dressing; stir to combine well.
  4. 4
    Garnish with sliced egg and dash of paprika.
  5. 5
    Chill completely, serve and enjoy!

Yum! I made almost as directed, but used regular mayo, added a few peas, and ground up the carrots, left out the hard boiled egg. I took this to a pot luck and it was much enjoyed! Thank you Karamia!

    I loved it! I used reduced fat mayonnaise. I'm sure the fat free mayo would be great, too. Thanx for a lightened up macaroni salad that tastes great!

    Love this recipe. I didn't have carrots or celery, but I did find a jar of pickled mixed Italian veggies and picked out the carrots and celery, and you know what, they added a wonderful perky taste!! I def recommend that addition. I also found a green pepper and used half, chopping it finely. I used my homemade relish and chopped up two eggs and mixed them up with the rest. My family really enjoyed the salad.
