Mexican Shepherd's Pie

My 6 year old daughter says this is the best thing she's tasted in her whole life ! That's high praise from a normally fussy child, so this recipe is definitely a do-over.

SERVES 4 (change servings and units)

    Brown and drain ground beef.
  2. 2
    Add taco seasoning to taste [we prefer a less spicy mix, so I only use half the envelope].

    Add corn.
  4. 4
    Meanwhile, boil potatoes until tender, then mash.

    If you like, you can add butter and milk.
  6. 6
    Spread about one third of the potatoes in a round 2 quart casserole dish.
  7. 7
    Top with the ground beef mixture, then the cheese. Finish with the remaining potatoes.

    To use right away, bake at 350 about 30 minutes.

    To freeze, cover and freeze until solid. Lift out of casserole dish and wrap in foil. Place in zipper bag, label with name and date. Use within 3 months.

    To reheat, unwrap and place in original dish, defrost completely. Bake at 375 for 40-45 minutes.

Delicious. i did add a little extra chili powder and cumin (we like strong seasoning). Quick and easy. Everyone loved it.

    I add Cholula hot sauce on top to serve, as I like things spicy. This was alright for an easy meal, not as pretty as the picture though!

    Simple and delicious. I added half of an onion to the meat and mashed the potatoes with milk. I wouldn't try to impress any guests with this or anything, but it's good for the family Thanks for posting!

    Excellent recipe. I doubled the amount of meat and spread cheese over the top during the last 10 minutes of cooking. I also more than doubled the amount of taco seasoning and added 2Tbsp each cumin and chili powder.
