Lamb Chops With Mint Jelly Crust

Simple to make and classic mint and lamb taste. I like to serve these with jacket baked potatoes and some steamed green veggies and carrot sticks.

SERVES 3 -4 (change servings and units)

Ingredients

Directions

    Pre-heat the oven to 375'F/160'C.
  2. 2
    Place the lamb chops in a shallow baking pan and season with the salt and pepper.
  3. 3
    Place the breadcrumbs in a bowl and mix in the mint jelly.
  4. 4
    Spoon the mixture onto the top of the chops, pressing it down firmly with the back of the spoon to make sure it sticks to the chops.
  5. 5
    Bake the chops for 20-30 minutes or until they are cooked through.
  6. 6
    Serve immediately.

It was a 'JenT night' round at our place tonight! These were great Jen! Really simple & tasty. Even the kids gobbled them up! I was so pleased to use up some of the Mint Jelly I had floating around. I served our chops with roast potatoes & corn on the cob (basically the only veges the kids eat these days!). For dessert, I served them up your Quick Steamed Pudding (#126048) with cream. Yum! A winter comfort food night for my family. Thanks again Jen

    Jen these are really yummy and so easy to put together. The mint jelly holds the breadcrumbs together really well. Loin chops are getting expensive and by adding the breadcrumb mixture I find it makes them go a bit further Definite favourites cookbook for us.
