Old Widow Walker's Ziploc Omelettes

Recipe #132052 | 33 min | 20 min prep | add private note
Pot Scrubber

By: Pot Scrubber
Aug 2, 2005

Mrs. Walker was my Sunday school teacher and we used to do this in the church kitchen, occasionally. This is my first memory of cooking that I cherish to this day. She keeps her age a closely guarded secret but is rumoured to be 115+ years old and perhaps, immortal. She has out lived three husbands and four children. She is still sharp as the Bowie knife she carries in her purse. I don't know why she carries a Bowie knife in her purse- but she always has. I asked her about it years ago and she said, "You would be surprised how often it comes in handy, Honey." I suppose it does, Mrs. Walker. God bless you. BTW- she is thrilled that I want to pass this on to another generation of schoolchildren. She was surprised that I remembered doing this with her over 35 years ago and was touched. When asked how to do it- she rattled off the instructions faster than I could write! Edited: Mrs. Walker died peacefully in her sleep 3-31-06 of natural causes a few days before her 106th birthday. She is mourned by our community because she had a hand in raising and teaching generations of our families. Thank you Mrs. Walker. You are loved, missed, and remembered.

SERVES 5 , 5 omelettes (change servings and units)

Ingredients

Directions

  1. 1
Have children write their name on a quart-size ziploc freezer bag with permanent marker.
  2. 2
Crack 2 eggs (large or extra-large) into the bag (not more than 2) shake to combine them.
  3. 3
Put out a variety of ingredients such as: cheeses, ham, bacon, onion, green pepper, tomato, hash browns, etc.
  4. 4
Each child adds prepared ingredients of choice to their bag and shake. Make sure to get the air out of the bag and zip it up.
  5. 5
Place the bags into rolling, boiling water for exactly 13 minutes. You can usually cook 6-8 omelettes in a large pot. For more, make another pot of boiling water.
  6. 6
Open the bags and the omelette will roll out easily.
  7. 7
Be prepared for children to squeal with delight at their first meal they have cooked. A lifetime memory has just been served.
  8. 8
Note: I had to fill in SOMETHING regarding cooking time, serving sizes, and amounts. This of course, depends on your situation and how carnivorous the kiddies are. I've tried to guestimate for five servings.

I made this for a Girl Scout breakfast serving 30 moms and girls. I did test it on my family first. We found that my DD couldn't mix the egg well enough in the bag. That resulted in spots of yolk and spots of white so she wouldn't eat it. I don't know if we needed bigger bags as we were using freezer pint size. I made the decision to scramble the eggs before putting in the bags. That turned out well and probably saved me a mess. Since we ended up with butter on the ceiling while buttering bagels, raw eggs in the same hands could have been bad. The moms and girls were fascinated by the cooking method and liked that they could add their own ingredients, which we did the night before to save time in the morning. My DD has asked that we make these on our family camping trip this summer. Thanks to you and Widow Walker for a fun recipe! And thanks for sharing your story, it made recipe even better.

This recipe was built on loving memories and continues to create lasting memories! This was a BLAST to make with Ty (almost 4 years old). He was so proud of himself! The only thing I did was crack the egg and put it in and out of the hot water. I gave him the ingredients and he chose to add 2 teaspoons of milk, ham chunks and cheese to the eggs. We did our rendition of "Shake Your Bootie" when "scrambling" the eggs. He ate the whole thing and then said he wanted to make one for Dad so it would be ready when he got home from work. He was so excited he had to call Dad at work and tell him ALL about it! If the length of his story was any indication of his enjoyment, we would have to give this recipe 100 stars. Widow Walker was one cool chick! Thank you Pottsie for sharing this memory, there is nothing like starting the day with huge smiles while cooking up some love!

I used this recipe often with my Girl Scout troop on camping trips. We set out bowls of choices and let each girl add her own. Easy, quick, and good. And yes, boiling them in the bags really works. I did find the heavier, name brands were better for this though. When planning menus for the next trip, this recipe always made the troop's request list. We served with biscuits and hash browns. Thank you for posting this recipe!
