From Southern Living. If you are watching sodium intake or salt-sensitive, this is not the recipe for you. I have edited this recipe with reduced salt amounts. I have also included the salt amounts from the original recipe for those who like things insanely salty. Use your judgement.

SERVES 4 (change servings and units)

    In a shallow container, mix together the first 3 ingredients; dredge catfish fillets in the cornmeal mixture.

    Place fillets on a greased baking sheet.
  3. 3
    Mix together the cajun seasoning and seasoned salt; sprinkle over fillets.

    Drizzle with butter.
  5. 5
    Bake in a 400° oven for 30 minutes or until golden and fish flake with a fork.

    Garnish with lemon wedges if desired.

I made these today for lunch and wow..these were really salty! I love catfish though and I did eat it because the parts with less of the crust were delicious. Next time I would omit the salt & seasoning salt and stick to the cajun seasoning. Thanks for an easy recipe NurseDi!
