Ingredients

  • medium tomato
  • tablespoons Italian seasoned breadcrumbs
  • tablespoons parmesan cheese
  • Directions

    1. 1
      Preheat oven to 350°F.
    2. 2
      Spray a 1 quart shallow baking dish with nonstick spray.
    3. 3
      Halve the tomatoes then squeeze out and discard seeds.
    4. 4
      Place tomatoes cut side up in dish.
    5. 5
      Combine the bread crumbs and parmesan cheese in small bowl.
    6. 6
      Sprinkle over tomatoes and bake until soft, about 35-45 minutes.

      1 point per serving (1 tomato half).

    I don't like tomatoes, so this review is from my 10 year old daughter...I heard lots of "Mmmm...mmmm, Mom, these are REALLY good!!" So, we will be making these often, especially in the summer when all of our neighbors are so generous with their produce!! Thanks!

    it was great! i even added some mozarela cheese and italian spices. However, make sure you get rid of all the seeds! thanks brittany

    Wow! I've never baked tomatoes like this before, and I loved the result! It really deepened the tomato flavor, while the breadcrumbs and cheese (I used soy parmesan) added another delicious dimension. This baked up perfectly in my oven in 35 minutes. Thanks for a real keeper, and healthy to boot!
