Quick Homemade Tomato Soup

This recipe came from Canadian Living magazine, adapted for our household...makes a great "fancy" lunch on a weekend even though it's so quick!

SERVES 4 (change servings and units)

Ingredients

    in saucepan, heat oil over medium heat.

    Cook onions and garlic until softened.
  3. 3
    Add tomatoes, stock, tomato paste and pepper.

    Bring to a boil.

    Reduce heat and simmer for 15 minutes or until slightly thickened.

    Using immersion blender or food processor, puree (optional).

Thanks, just what I needed. I left out the onions and substituted ketchup for the tomato paste. It was wonderful. It made A LOT of soup so I will be freezing the leftovers and enjoying them later.

    This was very easy to make and good too. I did find it a bit bland so I added some red curry paste to "liven" it up a bit, and then it was just right for us. Served with warm Irish Soda Bread. Thanks for the recipe!

    I love this recipe. I just made it tonight for supper and everyone, even my two picky kids, gobbled it right up. We served this with grilled ham and cheese sandwiches, perfect for a snowy North Dakota night. I substituted the 28oz can with two 14oz diced added a little more garlic. Also when I was cooking the onions and garlic I added about 1 tsp dried basil, 1/2 tsp Italian season, and some about 1/2 to 1 tsp. Mrs. Dash just before I added the tomatoes and so on. Thank you Sarah for this great recipe! We will be making this quite a bit.
