Mozzarella Chicken and Mushrooms

This is an adaptation of a recipe found on another cooking site. Great with rice, noodles, or mashed potatoes.

SERVES 4 (change servings and units)

Ingredients

    Preheat oven to 350 degrees F.

    Place 2 cups of the mushrooms in a 13x9 inch baking dish.
  3. 3
    Dip chicken breasts into beaten eggs, then roll in breadcrumbs to coat.

    Heat butter or olive oil over medium heat in a large skillet.
  5. 5
    Brown chicken (approximately 2 minutes per side) in skillet. Place browned chicken in baking dish, on top of mushrooms. Sprinkle remaining mushrooms on top of chicken, then top evenly with mozzarella. Pour broth in pan around chicken.

    Bake for 30-35 minutes, or until chicken juices run clear.

This was good. Next time I will add more cheese, and use thinner chicken breasts. I expected more of a sauce from the chicken broth/cheese/mushrooms, but it is not really a sauce. Was still good, and will make it again!

    This is wonderful and easy! I used Italian bread crumbs mixed with some Romano and Asiago grated cheese as well. Delicious! Made for ZWT4 - Tastebud Tickling Travellers.

    This was so yummy! It was easy and the mushrooms gave it a nice taste. I also used 1 egg and that was plenty to coat the chicken. Thanks for posting!

    Good recipe and simple to do but lacking some flavor. Next time I plan on adding some garlic or garlic salt on top of the chicken and under the mozzerella. I used only one egg and had plenty to coat the chicken. Thanks!
