Cool summer Salad with fresh vine ripened tomatos and sweet red onion. Simple, quick and delicious.

SERVES 4 (change servings and units)

Ingredients

Directions

    Line a platter with lettuce leaves.
  2. 2
    Cut tomatoes and onion into 1/4 inch slices.
  3. 3
    Line the lettuce leaves alternately with the tomato and onion slices. Drizzle olive oil and vinegar over. Sprinkle with salt and pepper.

The key-the absolute key to the success of this recipe is the freshest ingredients. Therefore I used fresh from the farm: tomatoes, lettuce and red onion. One of those type recipes you should never prepare out of season. Thanks for posting!

    Just excellent and definitely a repeater! This weekend for example. I made one serving portion and had to use cherry tomatoes b/c some bird pecked a big ole hole in the one Big Boy tomato that was finally ripe. I also chopped up the onion b/c of using the smaller tomatoes. No sea salt on hand and subbed kosher salt and used fresh ground Tellicherry pepper... YUMMY! Just too good! I imagine that the quality of the tomatoes will make a huge difference with this salad. Thanks, Derf!

    I really enjoyed this recipe. Purchased tomatoes from our local farmers market to insure the most flavor. Only change I made was to use kosher salt instead of sea salt per thats what I had in the pantry. Will be making this again for sure. Maybe next time will sprinkl with some crumbled feta cheese as well. Thanx Derf
