Tomato and Pasta Soup

quick for a weekend lunch

Ingredients

  • tablespoon olive oil
  • cloves garlic, crushed
  • medium red onion, chopped fine
  • 1 (445 g) can tomato soup
  • 1 (400 g) can chopped tomato
  • cups water
  • cups spiral shaped pasta
  • tablespoon finely chopped fresh basil leaf
  • slices bacon, chopped fine and cooked until crisp then drained on absorbent paper (optional)
  • Directions

    1. 1
      Heat oil in large pan; cook garlic and onion, stirring, until onion is soft.
    2. 2
      Add soup, tomatoes, water and pasta.
    3. 3
      Bring to boil; simmer uncovered, about 10 minutes or until pasta is just tender.

      Stir in basil.
    5. 5
      Serve with the bacon sprinkled on top (if using).

    Perfectly flavored soup and super easy to make. The only change I was to use crushed tomatoes instead of chopped. I served this to accompany Little Bee's Classic Club Sandwiches.

    My teenage daughter made this for dinner tonight, it got gobbled up pretty darn quick. Only thing we did is add a little grated parmesan over the top.

    We really liked this! Cooks up real quick, and turns out so fresh tasting. I used tiny shells for the pasta. Love the basil!! We also sprinkled a little Parmesan on top.

    Quick, easy and yummy. A definate winner! Sprinkled a little grated cheese on top and hey presto! a great meal for a rainy,lazy Sunday. Thanks.
