Mennonite Leek Soup

Adapted from my More with Less Cookbook-but it doesn't mean less flavor! This is a light yet filling and delicious soup. My kids enjoy eating it with a straw!

SERVES 6 -8 (change servings and units)

Ingredients

Directions

    Bring chicken stock to boil.
  2. 2
    Add leeks, potatoes, carrots and celery.
  3. 3
    Simmer 30-45 minutes until veggies are soft.
  4. 4
    Add seasonings and simmer another 30 minutes.
  5. 5
    Puree in batches in blender.
  6. 6
    Serve hot or cold.

Good winter soup, with plenty of taste. I don't as a rule add the pepper until the end as I find pepper corn can make the soup bitter. That was the only change I made, and it was wonderful! Thank you for sharing this soup recipe with us!

    A great healthy warming soup! I left out the carrots and celery for just a potato leek soup and used FF chicken broth instead of water, it tasted wonderful. Thanks for this winner Kaarin.

    I am eating more simply these days, and I really enjoyed this soup! I lightly pureed the soup, leaving chunks of vegetables. I used vegetable bouillion in place of chicken and fresh parsley.Thanks!

    I had to adjust the amounts and ingredients slightly for this recipe, it needed fresh garlic and I used half homemade chicken broth and half water and omitted the bouillon cubes, the taste of the spices mix well with the soup, thanks for sharing Kaarin!...Kitten
