This is elegant enough for a Sunday brunch, and provides a different way to enjoy your breakfast oatmeal. It can be enjoyed as is, or topped with maple syrup. Leftovers are good cold or can be reheated in an oven or microwave. From Lean and Luscious and Meatless.

SERVES 6 (change servings and units)

    Preheat oven to 350 degrees.

    Spray an 8-inch square baking pan with nonstick cooking spray.
  3. 3
    In a large bowl, combine oats, peaches and sugar.
  4. 4
    In another bowl, combine remaining ingredients.
  5. 5
    Beat with a fork or wire whisk until blended.
  6. 6
    Add to oat mixture, mixing well.
  7. 7
    Place mixture in prepared pan.
  8. 8
    Bake, uncovered, 50 minutes.

    Serve hot.

This was really good. I was looking for a low fat dessert/breakfast food, and this fit the bill. I added blueberries and egg substitute instead egg whites, and put some sugar free syrup on top. Also used a can of sugar free peaches. Just finished it this morning for breakfast and will be making another batch. Thanks Whisper!!!

    I love this!! I used canned peaches and splenda in place of the sugar. I also added a tsp of cinnamon to the mix. The bake time was right on as it was perfectly done after 50 minutes. Thank you Whisper for this delicious recipe!!

    I just found this recipe today and decided I needed a Dessert! I used splenda and I added some cinnamon and then when it was done I put a serving of sugar free syrup on mine. My daughters used regular maple syrup and they are both loving this!! It was very easy! Thanks!

    We went peach picking yesterday and came home with 53(!) pounds of peaches. So I'm looking for tons of healthy and tasty ways to use them! I chunked my peaches instead of slicing them, and used splenda. I was concerned at the amount of milk in this recipe but it baked up just fine. Nice texture but kind of bland. I'd like more peaches and more spices. Loved the healthiness of it. Thanks Whisper!
