This is my own macaroni salad. I did not get it from my mother or my grandmother and I did not get it out of a book or off the internet. It is not Amish, Cajun, Mexican or any other description of the various macaroni salads that are posted on the internet. It is my own made up salad. It is designed after my own Creamy Potato Salad that I have posted on Recipezaar (with 81 high reviews, thank you very much to those that have tried it). The dressing is mostly the same, but there are a few other ingredients in this salad that is not in my potato salad. I hope some of you will enjoy it as much as you did the other.

SERVES 20 (change servings and units)

Directions

    Mix cooled macaroni, celery, onions, bell pepper and green olives together in a large bowl.

    In a separate bowl mix together the mayonnaise, mustard, vinegar, pickle relish, sugar, salt, pepper and celery seed, stirring well.

    Stir dressing into the macaroni mixture.
  4. 4
    Stir in the crumbled bacon.
  5. 5
    Serve chilled.

    For another variation, omit the green olives, add sliced black olives and a container of grape tomatoes.

    For a meal type salad, add diced cooked chicken or tuna fish.

This recipe was very good. I felt that if you used half mayo, half miracle whip, it was a bit strong. Next time I would use 2/3 mayo, 1/3 miracle whip. I also used 1 tsp yellow mustard, 1 tsp dijon. I also added some cheddar cheese. All in all, a great recipe. Thanks Karen

    This was a very tasty Macaroni Salad. I did make a few changes. I chopped the celery and sweet onions into fine dice. I used a green pepper instead of red, and I used about 20 olives. I used more mayonnaise as it seemed to get absorbed during sitting time. I omitted the relish, as we don't care for it, and I skipped the bacon, personal preference. It's a basic recipe, that you can change around to your own liking. Thanks for posting for us Karen!

    My son loves macaroni salad but he is so picky about it or at least he was until I made this recipe. It was the dressing that he always complained about. We really loved the slightly sweet flavor in this dressing and it really is very creamy. I used mayo and Miracle Whip and I used the "light" versions of both. I made this early this morning so it could sit and chill all day. Served your macaroni salad with Shredded French Dip Sandwiches #69661 and they went well together. I'll say here the exact same thing I said in my review of the "french-dip sandwiches" - I can't wait for leftovers tomorrow night! Thanks Karen!

    Since your potato salad is one of our favourites, I knew I had to try this macaroni salad. The only changes I made were to omit the olives (since I didn't have any in the fridge), and in place of the bacon, I threw in a can of tuna! I also like using half mayo and half Miracle Whip for the dressing. Absolutely delicious! Thanks for another great recipe, Karen!
