Lady Bird Johnson's Spinach Casserole

A must Try! This spinach dish is SOOO good!!! Got it out of the Houston Chronicle food section, tried it, and my family fell in love with it. My 3 yr. old grandson ate 3 helpings. Best of all it's really easy to make.

SERVES 5 -6 (change servings and units)

Ingredients

    * Preheat oven to 375 degrees.
  2. 2
    * If using fresh spinach, wash spinach and drain. Cook damp spinach in a hot skillet until wilted; chop coarsely.
  3. 3
    * Combine spinach with cheese, onion, cream and 4 tablespoons of the butter. Add salt and pepper to taste.

    * Place mixture in a shallow, buttered 1 1/2-quart baking dish.
  5. 5
    * Mix cracker crumbs with remaining 2 tablespoons melted butter and sprinkle over spinach mixture.

    *Bake for 20 to 30 minutes or until golden and lightly crusted.

5 Stars ! In general I upped all of the quantities of the ingredients except butter which I ommitted completely (since I had more cream)and since we like a crunchy topping. I used Huntly Palmer Cream Crackers for the topping and this is my first ever recipe using cracker crumbs instead of breadcrumbs as a topping, Yum! I will definiately be doing this again! Mine took about 30 minutes in the oven and I served it over spagetti and it was a total hit. Please see my rating system:5 stars for an easy to make recipe that is very tasty indeed and gained many requests for second helpings. Thanks !
