Roasted Asparagus

These add a nice addition to any meal. a real treat for asparagus lovers

SERVES 4 (change servings and units)

Ingredients

Directions

    Clean and break off tough ends of asparagus.
  2. 2
    Roll asparagus in olive oil, coating each one.
  3. 3
    put on cookie sheet.
  4. 4
    Bake at 400 for 15-20 minutes, until tender and crisp.
  5. 5
    Take out and sprinkle parmesan cheese over them.
  6. 6
    return to oven for 5 minutes.

I like the idea of adding the Parmesan cheese to the asparagus, but thought that it needed something more so I combined this with another recipe (asparagus #214165) from zaar to create what turned out to be an awesome tasting asparagus. Thanks for the idea of adding the Parmesan!!

    Very delicious and elegant dish. I served this with seared sea scallops and rice. I have roasted asparagus many times, but I have never finished it with parm. Very good!

    Very yummy recipe. I added some minced garlic and sprinkled a little salt on top too. This is an easy dish to cook in a toaster oven.

    You can't beat fresh asparagus over the canned, although my husband loves the canned! I think I may have put too much olive oil on the asparagus as it was a little soggy - not crisp like I had thought it would be - you know like the kind you get in restaurants! But the taste was by far better than out of the can! Also, my husband wanted me to add a little garlic to the oil next time!
