Just right for the holidays! Serve this delicious, pretty yam dish and your friends will think you're a gourmet chef. Hint: It's really easy to prepare! Tested at high altitude.

SERVES 4 (change servings and units)

    Bake yams (skin on) at 350-degrees until tender when pierced with fork (approximately 45 minutes to 1 hour).

    Remove from oven and wrap in damp paper towel.
  3. 3
    Increase oven temperature to 450-degrees.

    Allow to cool for 10 minutes.
  5. 5
    Peel off skin.
  6. 6
    Slice yams into 1/2" thick rounds.
  7. 7
    (For extra-nice presentation, after you've cut the rounds, use a cookie cutter to create scalloped edges or fancy shapes.) Place yam slices in a shallow baking dish that has been sprayed with non-stick cooking spray and pour orange juice over all.

    Mix nutmeg with brown sugar and sprinkle atop each slice.

    Top each slice with finely chopped pecans.

    Bake in oven for 10 minutes, or until the sugar is melted and pecans slightly toasted.

    Serve immediately.

    We loved this dish with our holiday meal. I baked the yams the night before and then sliced into cubes. I took the orange juice and added a tbsp of light brown sugar and dash of nutmeg, mixed and put in a large ziploc bag. As I added in the yams to the ziploc bag I added brown sugar to each layer of yams in the bag. Marinated this until dinner next day, turning the bag during the day. Before baking, I added a cup of juice and yams to pyrex dish. Then as I layered the marinated yams I sprinkled each layer with brown sugar/nutmeg mix. Baked in oven at 325 for 25-30 minutes. These were delicious and not overly sweet (sugar to your taste). The work was already done so last minute assembly was easy!!

    A great way to do yams without all the sugar and marshmallows. I did cut back on the nutmeg. Will certainly make this again.

    I like this recipe as it uses less sugar than some of the other 'candied' yam recipes. After tasting these with the fresh orange juice, I can see that they can turn out sweet and delicious with less sugar! I microwaved my yams before slicing/peeling them instead of baking. I wanted to make the cute shapes as suggested, but either my cookie cutters are too big, or the yams too small. I also found I was out of pecans so just left them off. Turned out delicious anyway! Hope to use the pecans next time. Thanks!
